Paya Masala

Paya (trotters) is a slow-cooked dish that requires a specific blend of warming spices to complement the rich, gelatinous broth. Our paya masala includes black cardamom, fennel, dried ginger, and a blend of whole spices that create the characteristic deep, warming flavour of a proper paya.
